Pinot Noir is for many aficionados synonymous with classy wine. Rather bizarre to cultivate, not at all flexible in the vineyard and in the cellar, it needs unique soil and climatic conditions to be able to express itself according to criteria of elegance and finesse. During the winemaking process, it requires attention, forcing winemakers and cellarmen to have to use all their skill. From Burgundy, its place of origin, to Italy where in some specific areas it finds that happy nobility, showing its sublime distinctive profile. As in the Trentino area, at the foot of Monte Stivo, in the territory of Sasso and Monte Ghello, where Cantina Vivallis has been able to enhance its features by bringing out fruit and freshness. From their most suitable area at 500 meters above sea level, from selected vineyards and low yields, the “Stif 2059” project, awarded by The WineHunter, creator of the Merano Wine Festival 2020, comes to life. A few days of cold maceration at 10 ° C and vinification separated from some selections, they bring elegant pale ruby ​​red nuances to the glass. The nose opens to small red fruits, indulges in a distinct and multidisciplinary sip. The decisive attack tells of a mineral tension and a consistency that does not offer roughness or rigidity, but which focuses on a round tannin, on a gustatory performance of a great terroir wine.

To be tasted in large glasses that highlight the spicy nuances, served at a temperature of 16 degrees, paired with a Chateaubriand Fillet.
