The Télos project of Famiglia Castagnedi was born in 2010 from the need to be able to enjoy a glass of wine that reflected sustainability, was vegan and free of added sulphites. The starting point was the continuous research that the company has done from an agronomic point of view, experimenting with everything that was increasingly in synergy with environmental choices. For Famiglia Castagnedi, the experience was born right in the vineyard, it is fueled by curiosity, by an interest constantly addressed to the quality underlying the need to prepare the vineyard in the best possible way. Agricultural practices that look to the custody and development of the territory, focusing on the future DNA of wine, benefiting from fermentations conducted at controlled temperatures without the addition of sulphites. The wine is structured powered by its own fine lees, enriched with mannoproteins that strengthen the texture and thicken the taste.
So what is Télos Il Bianco? It is the manual harvest of Garganega and Chardonnay, respectively for 80 and 20%, from vineyards located in the municipality of Colognola ai Colli - in the province of Verona -; it is the purity of the vinification in steel tanks, it is the integrity of the fruit in an incredibly fresh olfactory breadth, referring to a short aging carried out in the same containers.
Tropical notes, pineapple and lychee, fresh vegetable of mother grass, elderflower, broom and lime, finally citrus, invade the nose and palate, combining the Soave terroir. In the mouth it is pure minerality, the sapidity of volcanic soils of which you can almost taste nature. A modern expression of the seed of the earth, respectful of geography intended as a union of microclimate and subsoil, it is a great white that combines pleasure, well-being and the satisfaction of those who choose it.
Excellent as an aperitif, excellent paired with seafood first courses.
