For those who haven’t known Cà Rovere winery yet, we recommend that you go and look at its website www.carovere.it because it allows you to immediately understand the extraordinary peculiarities of this winery, one of the most beautiful and dynamic in the Berici Hills. And it is precisely on the suggestive Berici Hills that separate the province of Vicenza from that of Verona that the Biasin family, now in the third generation but with the first still active, has succeeded in twenty years, with its approximately 20 hectares of vineyards, testify to the excellent winemaking vocation of this land. And, in particular, to testify how these Hills were also the ideal habitat for varieties suitable for the production of excellent bubbles. We remember well their beginnings when there were not a few skeptics who supported the difficulty of making excellent classic method with a variety like Garganega. But the Biasins are people who love to talk with facts and determination, characteristics that the years brought today to be a very authoritative reality on the front of the production of high quality bubbles. An excellent example is their Cà Rovere brut Millesimato of which we tasted the 2016 vintage which not only convinced us but also made us understand the qualitative peaks reached by the Vicenza company. A classic method obtained from 70% Chardonnay and 30% Garganega and with an aging of 36 months on the yeasts that already shows a fine and lively perlage. The nose immediately reaches notes of tropical fruit (pineapple and passion fruit in primis), but also an original hint of medlar and dried fruit (walnuts, almonds). The floral notes are also evident, in particular acacia. Excellent freshness in the mouth but also a nice velvety, harmonic sensation and a bitter almond finish that prolongs its persistence. We paired it with an excellent baked sea bass and it was just perfect.

Cà Rovere is a family business, born from the passion for a little known, yet fascinating territory. Bruno Biasin was able to transmit his enthusiasm for viticulture and involve now the third generation of the family. The work and passion for wine has involved the entire family: starting from grandfather Bruno, who fell in love with these hills and planted the first vines “among the rocks”, as he likes to recall, to grandmother Giuditta, her tireless collaborator, and their sons Ugo, Sisto and Alessia – now with their families too. The intuition that this land had a vocation for quality grapes pushed the Biasin family to bet on the classic method sparkling wine, aiming to give expression to the minerality of the soil into a fine wine with natural elegance.
