Colle Manora, a winery in the Monferrato region, bet on the elegance of the Sauvignon Blanc when, in the early 1980s, it decided to plant this variety among its 20 hectares of vineyards.
At that time, when red wines were unquestionably dominant, it was uncommon to focus on this grape variety, still relatively unknown in the Piemonte region. Yet, never as much as today can we confirm the foresight of that decision, made during the early days of Italy’s wine renaissance.
The Sauvignon by Colle Manora is now crafted with profound expertise in this grape variety, which has become a true strength for the winery. This was evident during the tasting, where the wine revealed its distinctive aromatic identity and full expression on the palate.
Full and ripe notes of exotic fruit immediately convey the impression of a well-crafted Sauvignon: precise and free from excessively sharp or unbalanced aromas. Fresh floral hints and delicate citrus notes, culminating in bergamot, add to its aromatic breadth, perfectly balanced.
On the palate, it is round in the truest sense of the word—full-bodied and well-defined in its complexity. Mineral notes add an extra dimension to its pleasantness, leading to a long, sapid, and very elegant finish.
Colle Manora not only won this bet – if it ever was one – but also identified a grape variety that embodies the winery’s identity and has become one of its reference wines.
We paired the Mimosa with salmon pasta, but first we enjoyed it as an aperitif to better appreciate its authentic essence.

Giorgio Schön and Marina Orlandi Contucci have transformed the historical company Colle Manora over time, establishing new vineyards and renewing the structure and technology of the cellar. Colle Manora is a blend of the characteristics that make Italy famous across the world: quality, style, and passion. A total of 20 of the company’s 100 hectares are planted with grapes in an excellent environment.
