We tasted the bread with a glass of pure Carmenère wine, also produced by organic farming and obtained from a vine that has had one of the most troubled stories of world enology, not so understood for years, up to its cradle that are the Berici mountains, to live a new era that is enhancing it. At an olfactory level it is rich in spices but never intrusive, a fleshiness that also emerges on the nose and then reaches the sweetness of the green pepper, a perfume that, the more time passes in which it dwells in the glass, the more it rises to elegance.
In the mouth its harmony is genuinely true, never a gleaning, never a different note from what the smell has received, and in its balance it closes with a softness that reminds of silkiness and great harmony. Here the vinification is natural, made with the use of pied de cuve with spontaneous yeasts, fermentation and aging in vitrified cement tanks, using very low amounts of sulfur, below 30 mg and within the limits of the Vinnatur disciplinary.
To combine with everything that, by smelling this wine, can get you an emotion. For our part, we can confirm that that slice of bread with the oil produced by the Del Rèbene company has given an emotion that still surprises for its genuine simplicity.
An ancient village, a hilly terroir of great scenic beauty, suited to the cultivation of vines, in the heart of the Berici Hills of Vicenza: here lies the Del Rèbene winery, so named because already in 1500 the Cimbri colonists had called this lucky hill ” Rebène “from the cimbro Reben, that means” vine, vineyard “. A small artisan familiar company, which identifies its mission with respect for the territory and sustainability, using sustainable energy and is conducted with biodynamic and biological methods certified since 2007, in a pristine site far from conventional cultivation, entirely surrounded by woods. The cultivation of the olive tree, also widespread in the area since the Middle Ages, mostly uses indigenuos varieties that give a fresh, fruity and gentle oil, with interesting aromatic notes. The company offers enotourist hospitality and accommodation in the rooms obtained in the barns and stables of the ancient village.
