Arminio Valentini, although perhaps few people know that, is a mythical name in Trentino sparkling wine field. An old advertisement in the Alto Adige Strenna of 1899 states that he is the first Trentino sparkling winemaker. This document credits Vallagarina as one of the most suitable lands for producing excellent sparkling wines, starting with King Chardonnay.

Vivallis cooperative has managed to maintain the very high quality profile of its Valentini di Weinfeld sparkling wine line. We tasted their Arminio Trentodoc Riserva 2015 and it was love at first sip. A classic method obtained from 70% Chardonnay and 30% Pinot Noir, with a stay of 60 months on the yeasts that in some respects is not felt and we consider this a positive aspect as the freshness and fragrance remain very high and therefore a extraordinary drinkability. 

The perlage is fine and persistent, but it is already on the nose that it gives you the most beautiful sensations with beautiful fruity notes (white fruit, apple and pear), but also citrus, floral (hawthorn) hints and an elegant texture of bread crust. In the mouth there is great harmony, freshness, flavor but also an intriguing creaminess and excellent persistence. Very good.

We paired it with excellent baked sea bass and made a great impression with friends.
