The winery’s Primitivo del Salento is called Tumà, the nickname of the person who began the journey of primitivo in that area more than 140 years ago. Obtained from organic grapes, this wine is worked exclusively in steel to preserve the typical characteristics of the grape.
In the glass it presents a red color that changes intensity with brilliant nuances while notes of fresh plum and a ripe but well-defined cherry immediately emerge on the nose. Even the small red berries are perceived in the Mediterranean spices that complete the broad and persuasive nose.
We immediately gave a rich and clean sip, with soft tannins, respectful of the general balance of the Primitivo Tumà.
This is a wine to pair with dishes that respect the harmony of the earth, but it is also a wine, which can be enhanced by pasta dishes with white meat ragout.
Our pairing was with a roast guinea fowl with Tropea onions and it was truly like dreaming of being in this splendid Masseria Cuturi.
Masseria Cuturi is a property of about 300 hectares located in Manduria (Taranto), in the heart of Salento. Nowadays, 30 hectares are dedicated to the production of autochthonous varieties of grapes including: Primitivo, Negroamaro, Aglianico and Minutolo. The current vineyard, of about 40 hectares, enjoys the microclimate of the secular forest of Cuturi, a protected nature reserve on the eastern Salento coast. We follow an organic cultivation based on safeguarding the natural organic substance of the soil, trying to enhance biodiversity as much as possible.
