The Colli Vicentini winery, which is a member of the Vitevis group, has consistently provided the greatest illustration of the Vicenza region’s wine culture. This Prosecco “Romeo” is made from 100% Glera and astonished us right away with its lengthy and exquisite perlage, anticipating the idea of tasting a contemporary Prosecco with care to every detail.
The olfactory sense was first broad and fresh, with distinct notes of fresh fruit and white spring flowers, as well as traces of citrus to complete the aromatic bouquet.
Cantina Colli Vicentini’s Prosecco is also a symbol of the Vitevis company, which runs four Veneto wineries over about 2,800 hectares of vines with love and forethought, a remarkable example of collaboration carried out by 1,350 dedicated vinegrowers from the industrious North East.
This Prosecco “Romeo” has a very distinct overall harmony and individuality in the mouth. Prosecco may seem easy to pair, but the soils from which it is produced in each territorial zone provide important differences. These differences may be accentuated in aperitifs and in the various recipes, the majority of which are based on lagoon fish.
We paired it with clam soup and grilled cuttlefish au gratin, and it gave us very satisfying thoughts.
This Prosecco DOC is part of Vitevis’s 100% Carbon Neutral certified line, a project that represents a natural progression for the brand, which has always paid close attention to climate change and client needs. The CO2 emissions produced throughout the manufacturing process are neutralized by validated carbon credits.
