This is where the red I Simieri is produced, the result of the classic blend of Valpolicella, Corvina (50%), Corvinone (30%) and Rondinella (10%), to which another 10% of other typical vines of the territory are added.
The peculiarity, but also this is a classic in Valpolicella, are the 4 months of drying on racks, a subsequent fermentation of about a month and an aging of 6 months in oak barrels.
The result is a wine of extraordinary roundness and softness, warm and silky, with “sweet” but never cloying notes.
The notes on the nose are those typical of the great wines of Valpolicella (Amarone at first place), but everything more mature starting from the cherry and black cherry that here express their most intense notes of overripe fruit. Very spicy hints of vanilla and cloves, tobacco and pink pepper are also very evident. In the mouth it is extremely enveloping, silky tannins, soft and despite the high alcohol content (above 16 °) everything appears extremely pleasant and drinkable.
We paired it, in a pleasant fine dinner, with a Monte Veronese aged over 40 months and was simply perfect.
The estate “Coali” is located in a small village in the hills of “San Giorgio Ingannapoltron”, in the area knows as “Valpolicella”, in Verona province, north-east Italy. The art of viticulture is a richness that the Savoia family has passed on for three generations, farming the family owned property: 30 acres of which 15 are dedicated to vineyards. It is a very small winery which produces only 22.000 bottles a year. Savoia family follows personally each phase during the production and sale of the wine. All the grapes come exclusively from owned vineyards with rigorous manual selection of clusters. In all phases particular attention is payed to enhance the typical characteristics of the grapes from land: Corvina, Corvinone, Rondinella and Molinara are grown and harvested with the greatest possible respect for the environment.
