In this production area, the “ancient” Perricone is also cultivated, a grape variety that was part of Sicily’s history for many years, now rediscovered in a modern and very captivating key. It is a delicate but drought-resistant variety; with low yields in the vineyard, it has thick skin but a gentle character when used as a single varietal. In fact, in many cases, it is used to give structure and character to the more famous Nero d’Avola.
For Colomba Bianca, however, the Rèsillience Perricone is a true oenological pride. It is perceived on the nose as intense and very clean, recognizable by those notes of Mediterranean scrub, red fruit (particularly marasca cherry), and elegant spices of pepper and juniper.
In its beautiful packaging, Colomba Bianca brings Perricone to the market in a very contemporary version. On the palate, in fact, it is full and balanced; good tannic persistence completes its extreme elegance and its gustatory-olfactory harmony.
